Lambic and Wild Ale — Spontaneous Fermentation, Time, and Patience
If there is a beer style that deserves the word "unique," it is lambic. While for every other beer, the brewer chooses the yeast and controls the fermentation, with lambic, nature decides. The hot wort is poured into shallow open vessels called coolships and left to cool overnight — during this time, wild yeasts and bacteria from the surrounding air begin a spontaneous fermentation that will last months and years. This process is only possible in a specific region — the Zenne valley, southwest of Brussels — and only during a specific season, between October and April.
Gueuze — the Champagne of the Beer World
Gueuze is a blend of young and old lambics — typically one, two, and three years old — bottled and left to referment in the bottle. The result is a dry, intensely carbonated, complex beer with aromas of green apple, citrus, hay, and leather, and an acidity that is more reminiscent of natural wine than typical beer. It is no coincidence that it is called the champagne of the beer world.
Fruit Lambics — Kriek, Framboise, and Beyond
When whole fruits are added to lambic — traditionally cherries (kriek) or raspberries (framboise) — something is created that is hard to compare to anything else. The fruits ferment in the lambic for months, imparting color, aroma, and character, without leaving any sugary sweetness. Authentic fruit lambics are dry and complex — far from the industrial sweet versions you may have encountered.
Wild Ale — Wild Fermentation Outside Belgium
Inspired by Belgian tradition, breweries worldwide create their own wild ale beers — through spontaneous or mixed fermentation, barrel aging, and blending of different vintages. Each wild ale is unique — influenced by the microflora of the specific location, by the barrels, by time, and by the brewer's patience. These beers are collectible by nature — many of them improve with years in the bottle.
Vintage Series and Aging
Lambic and wild ale are among the few beer styles where aging is not just an option — it is part of their essence. Vintage series with a specific brewing year, barrel-aged blends, and limited editions of different ages offer a rare opportunity to observe how a beer develops and transforms over time. These are beers for collecting, for comparative tastings, and for special occasions.
